PUTO LECHE



(leche)
4 egg yolks
1 can (big) (300) condense milk
(optional)
2 teaspoon lemon juice
Procedure
1. Separate egg white from yolk
2. In a bowl paghaluin ang egg yolk, condense milk at lemon
3. Mix it well together.
4. Bago ilagay ang mixture sa mould e grease muna bawat isa using butter or oil.
5. let it steam hangang 15 minuto in a moderate fire.
6. After 15min. Hanguin po natn at palamigin.

2 cups cake flour
1 cup white sugar
4 egg whites
2 tablespoon baking powder
1/4 teaspoon salt
1 1/2 cup water
1/4 cup evaporated milk
Procedure
1. In a bowl, combine po ntn ang egg white,evap milk, and sugar. blend until the mixture is smooth.
2. Sift together the flour, baking powder and salt. And mix it to the egg white mixture also with the water.
3. Mix po ntn until well blended and make it sure it's lump free.
( you may use sifter if u want)
4. Scoop a mixture at ilgay po sa fan filling and let it steam po uli for another 10 min or until maluto
5. Remove from the steamer and let it cool before unmoulding po.
you may use coloring food on your puto..

STEAM AND BAKE SIOPAO

CHICKEN ASADO
Ings...
1.1000 grams chicken
2.3/4 cup tomato paste
3.3/4 cup cup ketchup
4.3/4 cup sugar
5.1 tsp salt,1 tsp.pepper
6.1 tbsp.garlic chopped
7.3 pieces of onion chopped
8.cooking oil
9'boiled egg 6 piesces cut crosswised in cubes
directions for the filling.
a).Boil the chicken with garlic few galic 3 or 4 cloves,1 piece of onion cut into 4 ,wholepepper corn 1 tsp. and dash of salt,boil until cook.
b.)when its done drain the stock ,separate the chicken and let it cold.
c.)Remove the chicken from the bone make 2 cups of shredded chicken
d.)Saute the onion and garlic in a medium heat fire,when the onion turns to pink color add the shredded chicken followed by ketchup ang tomato paste,add the sugar salt ang pepper,mix the all together,seasoned according to you taste,cooked until all the flavor blended together.
e.when its done transfer in the plate and put in the fridge for 20 mins..
DOUGH MIXTURE
1.6 cups of all purposed flour
2.9 tbsp tbsp.of cooking oil
3.3 tsp.yeast
4.1tsp.salt
5.1/2 cup sugar
6.1 pint water,lukewarm water
7.3 tbsp.baking powder...
A.Mix all dry ings together,flour,yeast,sugar ,salt and baking powder.
add the cooking oil from the 1 pint of water the slowly drop in the flour,slowly mix together to form a soft dough.,knead for 5 mins.
and transfer in a bowl(brush with cooking oil first) cover with dum cloth.
Let it rest for 1 hour or more.
B..After 1 hour,knead the dough again and divide into 2 parts.
c.roll like a log and cut the dough according to the size u want for your siopao.
d,form a small 20 round dough and let it rest for at least another 15 to 20 mins
e.when your dough is ready ,use your hand to flatter the dough,leave the middle part thick,just follow the picture.
f,put your filling in the middle 2 tsp and a small portion of egg,close your dough,see the picture for your guide.,paalsahin uli nang mga 15 mins bago sya e bake.
d.always prepare a paper for your siopao,put under to protect from getting wet in the steamer.
e.steam for 18 to 20 mins,dont forget to cover with cloth(top of your steamer.)dont over crowd or it will stick together or it will affect your dough for rising up.
f.for baking 180 degree for 45 mins or until brown..

nasarapan talaga ako titigan ang mga cupcakes.. here's the ingredient to make your own cupcake.

Ingredients:
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature - (substitute)- put 1tsp. white vinegar to 1cup of fresh milk and stand for 5 mins. until milk curdles
2 large eggs, room temperature
2 tablespoons red food coloring (use less food color if you want) you can use the gel type of food color
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
For the Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
Directions:
Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.


Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.
For the Cream Cheese Frosting:
In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.
Cook's Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.

CREAM CHEESE LECHE FLAN

Cooking time: 1 hour 45 minutes steaming                                                                           
Yields: 1 llanera

1 cup sugar
5 eggs
1 can evaporated milk (14.5 0z)
1 can condensed milk (14.5 oz)
4 oz cream cheese, softened
2 tbsp vanilla extract

Combine 2 tbsp water with 1 cup of white sugar in a llanera- place on a stove top. 
Melt sugar until golden brown. This will take about 6 minutes. 
Submerge bottom of the llanera on ice water when sugar has turned brown to stop cooking process.

Meanwhile, in a blender, combine and process eggs, cream cheese, evaporated and condensed milk, vanilla until smooth.

Pour mixture into the pan with caramelized sugar.

Cover llanera with aluminum foil and steam for an hour and 45 minutes. Remove from the steamer and chill in the refrigerator to set. Run a clean knife around the edge before inverting into a flat plate. Serve.

You can steam bake it if you prefer. Bake it for about 1 hour and 10 minutes at 350 F

KALDERETA

My very own kaldereta. less effort. madali lang iluto at syempre masarap paborito menu sa bahay namen.



Kaldereta Recipe

1 kilo ng pork(mas masarap na part yung ribs)
5 cloves garlic
1 large onion
4 tomatoe(kung yaw nio ok lang 1 small pack na tomatoe sauce)
beans
bell pepper
sweet potato
peanut butter(i used ludy's or lily's peanut butter but the best pa rin ang home made peanut butter ng mga tita ko)
soy sauce(for coloring lang)
catsup
pickles
calamansi
salt
ground pepper
cooking oil

1.Marinate pork sa soy sauce, calamansi, asin, pickes, tomatoe sauce kung ito ang gagamitin at paminta.
2.saute onion,garlic and fresh tomatoe kung ito ang gagamitin.
3. ilagay ang marinated pork. Pakuluin. lagyan ng tubig kung malapit na sya maiga kung hindi pa malambot ang karne.
4. lagyan ng catsup. kung malambot na karne pwede na ilagay ang kamote at beans.
5.Ilagay ang bell pepper.. sabay na ang peanut butter. siguraduhin konti na lang ang sarsa pag nilagay na nag peanut butter.
6. halu-haluin hanggang maspread ang peanut butter sa sarsa.
7.lagyan ng sili kung nais na maanghang.

Pichi-Pichi

kung nakakain na kau sa Amber's Restaurant tyak na masasarapan kau sa pichi-pichi nila.. Malambot at di talaga sya nakakaumay.tingnan ang nasa babang larawan ng kanila pichi-pichi at talaga naman matatakam kayo sa sarap.

Pichi-pichi recipe 

2 cups grated cassava
1 cup sugar
2 cups water
1 bundle of pandan leaves or 1/2 tsp buko-pandan essence
1/2 tsp lye water
grated coconut or cheese for topping

1. If using fresh pandan leaves, boil in 2 cups water until reduced to one cup. Set to cool.

2. In a mixing bowl, combine the sugar and the pandan flavored water until sugar is dissolved. 

3. Add the cassava and then add lye water while continuously stirring the mixture.

4. Pour in individual cup molds and place in a steamer for 45 minutes to an hour or until mixture becomes transluscent.

5. Allow to cool down then roll into grated coconut or cheese.
